Fern Bruschetta (Vegan Optional)  
Warm Vegetable Ragu Tossed in a Salbitxada Sauce. Served Over Charred Garlic Bread and Topped with 
Parmesan Cheese.

Sticky Glazed Cauliflower (Vegan) 
Lightly Fried Cauliflower Florets Tossed in a Balsamic Glaze and Topped with Toasted Sesame Seeds.


Course Three (Choice of One)

Shepherd’s Pie (Vegan) 
Hearty Stew of Lentils, Mushrooms, Field Peas and Corn. Topped with Parsley Mashed Potatoes

Chili Con Tempeh (Vegan Option) 
Mixed Peppers, Beans, Tempeh and Cashews. “Chorizo” Stuffed Poblano Peppers. Topped with Choice 
of NC Hoop Cheddar or Vegan Cheddar.

Pumpkin Gnocchi 
House-Crafted Pumpkin Gnocchi Tossed with Sauteed Local Greens in a Brown Butter Sauce. Drizzled 
with Roasted Pumpkin Seed Oil

Topped with Chai Spiced Frosting and Candied Walnuts
