After much delay, we have finally been able to proceed with construction, beginning with installing the new hood system! If you've ever worked in a kitchen before, you can probably imagine how excited we are to finally have this step in progress... nothing happens in a kitchen without a hood system, and little else in the building can happen until it's installation is complete. While things are moving along again now, we are now looking at construction continuing into September.
While the rest of the building is all still open drywall and not too much fun to look at... Karen has been hard at work finishing the areas she can. Check out this awesome tile on the bar front! We can't wait for you all to join us for a drink at the bar, and watch Matt and his team cook for you!
And speaking of Matt and his kitchen crew, the wonderful guys and gals in the back of house team have begun menu development for the new location as well.
One new item they've been playing around with is this dish playfully dubbed "steaktan" by Matt for the time being. It's the brainchild of our own Brendan Bussey, who was playing around with the idea of recreating the flavors and textures of lamb, and it is DELICIOUS! Look out for a version of this to make an appearance as a special here at Central soon!
